my thinking being long term higher output was worth the additional cost
I'm not set on any particular panel yet, if planning don't let me rebuild/extend the knackered workshop the way it was originally built I'll probably redesign it a bit

They are great panels (the 585's). I've got 3 of them as our bootroom roof. A heck of a W gain for little money and I'd happily buy them again. I bought them as they were a great size for the project and the area 3 covered made a good sized room below. Be aware though that they are beasts and you can't really run up a roof with them like you can with the high 300, low 400 panels. It took two of us to handle them into position on a 1 storey flat roof.

Have you got 3 of the 585's connected to a Hoymiles Joe? If so, any chance of a link to which one you had and now have? Wanting to look at adding 2/3/4 panels to a shed roof/ground next to it. (apologies for the sidetrack)

As Fintray says the panels are tied back to Victron 250/80 charge controller.
Last year, when looking there was plenty of Hoymiles 2000 4T available from Germany. For that I'd defo be counting on a dedicated line back to a correct rater breaker on the cu.

depending on planning... I'll have space for 20 south facing and 20 north facing
If I have to get planning permission (which I probably will) I'll change the design a bit and go all south facing... something a bit like this (image from google)

heating system is gulping down oil like it's going out of fashion, I want to install as much solar as possible now so it's there done when we're old

Sounds like a great plan Knighty. 11.7kW of solar will make a massive splash. Excited for you. In the North we now only really have a couple of dead solar months. Dec & January. Even Nov & February produce something useable when a larger scal system is gathering. The rest of the Year is at no cost or profit. Which then pays for the dead solar months. Personally I'd like to squeeze in some more insulation as that's the ultimate fit & forget.
Groundmount PV is a non starter? Although that image is pretty good for easy access cleaning,
