Somewhere one here there’s a post by Mr Gus about his cooking using this method and his diy haybox cooking apparatus. It’s a shame he’s not around at the minute because this was very much a subject in which he was knowledgeable and passionate.

With regard to pressure cookers I am also from the age group who grew up with one on the cooker top. Bacon joints, chicken, brisket through to corn beef hash and stews were the order of the day with my mum.

To that end we have an early generation ninja air fryer which also has a pressure cooker lid - we don’t use it massively but in winter it comes out and replaces the actifry on the work top. Pressure cooking is a great way to get slow cook results faster and I love it for making hearty stews and soups.
